Continuing the favorite cookbook theme, this month Chef Cyndi B will be showing you how to create favor with condiments and sauces. Cookbooks referenced are SALT FAT ACID HEAT, FLAVOR, and THE SPROUTED KITCHEN. She will make Cherry Tomato Confit, Salted Caramel, Mushroom “Ketchup,” Three Garlic Butter, and Preserved Lemons. Suggestions and recipes to accompany the condiments and sauces will be given.
